I cook A LOT of chicken. A lot. I LOVE chicken and it’s easy for me to cook, not to mention it’s extremely versatile. Okay, it might also be because a bag of chicken breast tenders on sale is only $6 (I’m a bargain hunter). This recipe is so yummy and my husband is a huge fan! Again, this recipe is for two but you can double it or even triple it 🙂
2 sleeves of crushed crackers (I used Townhouse but Ritz are fine)
salt & pepper to taste
dash of cinnamon
dash of chili powder
1/2 tsp. chicken seasoning salt
2 eggs
6 chicken breast tenders
Thaw the chicken tenders and pat dry with a paper towel. Crack open the eggs into a bowl and scramble; set aside. In a bowl, combine salt & pepper, cinnamon (this was actually an accident and it tasted great!), chili powder, seasoning salt, and crushed crackers. For the crackers I placed them all in a big plastic baggie and crushed them with a mallet. Now dip the chicken tenders into the cracker mixture, then into the egg mixture (coating well), and back into the cracker mixture.
Cook the tenders on a baking sheet at 375 for 15 minutes, then flip the tenders and cook for an additional 10 minutes. Voila! I think this particular recipe goes very well with good old fashion ranch dressing 😉
